If I'm on USEast and I try to switch to USWest in the main menu screen, it says USWest but still connects to USEast.

If you click USWest, it'll go to USWest. If you click USEast, it'll go to USEast. Whichever is being shown is the one you selected.

I suppose I wasn't thorough enough..

If I click USWest, it will log on to USEast.
If I click Asia, it will log on to USEast.
If I click Europe, it will log on to USEast.
If I click USEast, it will log on to USEast.

On the main title it will read the realm I selected, but it will still enter USEast.

Reset your Battle.net server list:
Click on Start, and then Run.
Type "regedit" and click Ok.
Click on the + icon beside the "HKey_Local_Machine" branch.
Click on the + icon beside the "Software" branch.
Select the "Battle.net" branch and press the delete key.
Click on the + icon beside the "HKey_Current_User" branch.
Click on the + icon beside the "Software" branch.
Select the "Battle.net" branch and press the delete key.

Now test your Battle.net options again
